Center for Genomic Gastronomy
Zack Denfeld is cofounder of the Center for Genomic Gastronomy, an artist-led think tank that studies the biodiversity and biotechnologies of the human food system. The Center has conducted research in Asia, Europe and North America and their work has been published in WIRED (UK), We Make Money Not Art, Gastronomica and featured at the World Health Organization, Kew Gardens and Science Gallery Dublin. For Cuisine Reboot Zack will speak about other food futures including cuisine and ecology [ O.F.F.I.C.E.] and use recent research by the Center for Genomic Gastronomy to illustrate these possible futures.
