Smart Gastronomy Lab

Based in Gembloux, Belgium, at the crossroad of technologies and gastronomy, Smart Gastronomy Lab is a users-centered living lab, co-creation and prototyping space that allows technological and grastronomical experimention.

It aims to develop new tools, alimentary proccesses, products, recipes... in the world of gastronomy. All innovations developed by SGL are based on a community of citizens, chefs, scientists, students, entrepreneurs, whishing to be involved in the whole creative and development process.

SGL was founded by different partners : Gembloux Agro Bio Tech (Uni researchers in chemestry and agro-alimentary), KIKK, Generation W (a community of walloon chefs) and BEP (economical bureau of Namur Province).

 

Chocolate & 3D Food Printing

SGL drives some research activities, among others on 3D Food Printing, especially chocolate printing. SGL aims to use 3DFP (3D food printing) as a complementary tool (and not a substitution one) to the existing tools : printed forms need then, in addition to be in 3 dimensions, have a good finition, and to offer the possibility to make objects impossible to create using conventional techniques (for example molding) or easily customizable (which avoids the creation of a new mold for each new object).

3D food printer was developed by hacking a classical 3D printer. It was presented in Milan at Universal Exhibition.
